We are taking a SLIGHT walk on the wild side with this wine. I personally love it but if you don’t drink a lot of natural wine I am going to need you to buckle up and have an open mind. I like drinking this wine chilled, so go pop it in your fridge where it can hang out until you are ready to have it. Hecho en Mexico, in a lovely area just south of the border along the pacific ocean where true artists are making wine. Bichi does not disclose all of the grape varietals used in El Prince, but there is definitely some lambrusco and dolcetto in there. This does not taste like a classic wine from Italy made from those grapes. It’s lighter, less structured and more wild and free.  There is an overripe strawberry jam energy here coupled with nice acidity that kind of makes it the perfect pizza wine. The grapes are also grown at a pretty high elevation and and have sandy and loamy soils so the wine really takes on characteristics derived from the place. Gotta love that Terroir!! It's amazing! The wine has touches of herbs and spice to go along with the abundant red fruit; its minerally and soft. Very delicious! Unfiltered and unfined!

Serving temp: I like to chill this down all the way! 10 min in the freezer or store in your fridge. 
Pairing: Pizza! Also, anything with a little spice and fat like Korean BBQ.
