I love this wine, it’s made from Catarratto and it's like a salty lemon drop that you just want to last forever. Coreleone is in Palermo in Sicily which is one of the most fertile areas in all of Sicily. To me, the wines just hit differently than catarratto made in other parts of Sicily. Gaetano’s pursuit of winemaking started from a very pure place: he wanted to become a farmer ever since he was a little boy. Sometimes farming can only take you so far and sometimes it’s a key to a magical wine. In this case all things align for Gaetano.
Serving temp: Fridge cold!
Pairing: Trout amandine; grilled chicken with yogurt sauce.
