Valentin is really a Maestro of the vine. Part of his obsession with Sauvignon Blanc and winemaking is in fervently controlling the pressing of the grapes.. He likes to consider the weight of the press and correlate it to the length of time with which to press certain grapes. Of course this definitely affects the texture and energy of the resulting wine. I am a big fan of the slow and low pressssss. Everything is unfined and unfiltered but honestly when you pop open the Bel Air it's like you have descended into the next level decadence.

Pairing: Sole Meunier, kiss of lemon would be awesome.
