Simon Bize was a Frenchman in Burgundy who was obsessed with the more humble sub-region of Savigny les Beaune. Simon, sadly, passed away in 2010 but he was married to a passionate and brilliant Japanese woman named Chiso Bize who took over. The wines have remained consistent with Simon’s vision but honestly over time they have gotten better. Savigny Les Beaune is one of the larger sub appellations of Burgundy and has a very ranging terroir. It has Flat parts, hilly parts, reverse hills that get very little sunlight, corners, roadside vineyards but Bize has some of the best spots. Higher elevation vineyards with killer exposure. The white wine is zippy and dense at the same time. It has an amazing texture that is elegant and decadent. The wine has crushed stones meats lemon zest energy and I am not mad at the combo at all! It's exactly what we want all the time! LOL. This, to me, is a Chardonnay converter: anyone you know who “hates” chardonnay, let them taste it Bize’s way. It's a game changer!
