Recaredo is arguably one of the best sparkling wine aka cava houses in Spain. But they take cava to the next level, it’s really one of the only producers who makes sparkling wine on the level of champagne. It pours out of the bottle as a burnt orange rose color, the nose is a deep intoxication of fruits and berries but on the palate you have touches of this but a super dry finish. The wine is Brut Nature, which is a Champagne classification for level of dosage aka added sweetness. Brut Nature means that nothing is added, it is always the driest of dry and as a result the aromas and flavors, the fennel and the raspberry pop even more. I took a sip of this and literally went: DAMN. I love when a wine surprises you with being next level, it’s sparkling wine for your wildest dreams and possibly a super romantic night.
Serving temp: Fridge cold! Keep it icy.
Pairing: Paella would be brilliant, obviously, but this would also be lovely with lamb or some sort of roasted poultry.
