This is from an area called Muscadet and made from a grape called Melon de Bourgogne. It’s literally the perfect oyster wine: Hence the label. Fresh, zippy, bright, mineral-rich and palette wetting. It’s a wine you always want to take another sip of, especially when you are downing briny little treats. The subtle, but not sweet, notes of pear, apple and honeydew are coupled with a dubstep beat of minerals and brightness. This is a third generation winemaker and is one of few in Muscadet who approach winemaking with a naturally skewed scope. Organic farming – wild yeast fermentation and allowing the grapes to express the terroir to blow all of our minds.
